Bring your favorite pot, pan, a few utensils and your favorite knife. Bring your appetite too! There will be lots of food for you to enjoy while learning.

Learn how to add pizzazz to any dish by creating a variety of sauces and gravies. Learn how to keep them from being lumpy or separating on you. Liven up and meat, pasta, rice etc. Make fabulous desserts. Bring your favorite pot and pan and a whisk. Bring your appetite as well. The class will include: how to make a lemon caper sauce, béchamel, a healthier twist on glorious gravies, a white wine reduction and a berry cullis…all this comes together in a wonderful menu for you to enjoy while you learn!

Let’s face it, how many of us have a pizza oven at home? Learn the art of the crusted, crispy Italian pizza without the necessity of the traditional massive bread oven. Pizzas will be prepared on a standard grill. We’ll make the dough, flip it into shape, top it and grill it to crispy perfection. Of course, nothing goes with Pizza like a fine Chianti.

It is easier than you think! Once you learn how to smoke and cure your own bacon pancetta and Tasso’ Ham you will never go back to store-bought again. We’ll use the meats to make a traditional Italian meal of pasta amatriciana, fagioli bianchi (that’s white beans…don’t get nervous) and bietola (swiss chard) and oh si, si, vino (don’t think I need to translate.)

It’s gotta be crusty and crumbly and golden brown on the outside. It’s gotta be stretchy on the inside with big air pockets. And olive oil, yes it has to be laced with the flavor of olive oil. Learn to prepare the real deal at home. It is impossible to find at the store, but easy to do it yourself.
